ARTISAN CHEESE MADE IN THAILAND

Jartisann’s version inspired by the Italian tradition of Il Formaggio Grana. Each solid cylindrical wheel takes 60kg of raw milk to produce with curds broken up into rice-grain size and cooked to 49 degrees Celsius in a copper cauldron. The cheese is then pressed, brined, salt scrubbed, and oiled over a period of 2-3 months to become a grana type cheese. Young cheese is mild and softer, while the older cheese is richer in umami and extra hard. Works as a grating and cooking cheese, but also serves well as a table cheese.
